Linda McCarthy’s Peanut Butter Cup Cookies


Cookie dough


                 Melt 3 oz. dark chocolate buttons with 2 tablespoons butter


                 Add 1 c sugar


                 2 eggs


                 ½ tsp vanilla


                 1 ¼ c flour


                 Chill at least an hour and roll into 24 balls

 

Preheat oven to 350 degrees

 

Slightly flatten each cookie with wet fingertips.  Bake for 10 minutes.


When cookies are still hot, press one miniature peanut butter cup into


the center of each cookie.  When the peanut butter cups have softened,


gently spread them out a bit on the cookie for frosting.  Leave a marbled


appearance.  Cool.

 

Note:  I’d probably double the dark chocolate buttons for my taste to 6 oz.


or one cup.  These would be a fun project to do with a child.
